Pumpkin Sheet Cake with Cream Cheese Frosting

 Ingredients

4 eggs

2 cups sugar 

1 cup vegetable oil

1 (15 ounce) can pumpkin puree

2 cups flour

3 t cinnamon

1 t pumpkin pie spice

2 t baking powder

1 t baking soda

1 t salt

Cream Cheese Frosting

1 cup butter (softened)

1 (8 ounce) package cream cheese

2 t vanilla

3 cups powdered sugar

Instructions

Preheat oven to 350 degrees.

Spray a half baking sheet with the non stick cooking spray.

In a mixing bowl, combine eggs, sugar, vegetable oil, and pumpkin puree until fully incorporated.  Slowly add the flour but continue stirring to avoid lumps.  Mix until well combined.  Add the cinnamon, pumpkin pie spice, baking powder, soda, and salt and mix until well combined.  Pour the batter into prepared baking sheet and spread in an even layer. Bake for 25-30 minutes.  or until set and let cool completely.  For the frosting, cream together butter and cream cheese in a mixing bowl until fluffy.  Add vanilla and powdered sugar and mix until smooth.  Spread frosting over the cake and sprinkle cinnamon on top if desired.

Cafe Rio Sweet Pork

Ingredients

 3 lbs pork shoulder/ butt

16 oz coca-cola soda (not diet) divided

1/4 cup water

1 t. garlic salt

1/8 t. salt

1/4 t. pepper

1 (4 oz) can diced green chilies

1 (10 oz) can red enchilada sauce

3/4 cup packed brown sugar

Instructions

Spray inside of a large crack pot with cooking spray.  place pork roast inside. Pour 8 ounces of coca-cola (I use measuring cup) and water around pork.  (It does not need to cover the roast).  Sprinkle evenly with garlic salt, salt and pepper.  Cover with lid and cook on high heat for 6 hours, or on low heat for 8-9 hours.

Remove pork form crock opt and transfer to cutting board.  Discard liquid from crock pot. Shred pork with two forks, and remove any fat.  

In a blender or food processor, blend the remaining 8 ounces of cola, diced green chilies, enchilada sauce and brown sugar. Blend until smooth.

Place shredded pork back in crock pot.  Pour enchilada sauce mixture over the shredded pork.  Cover crock pot with lid and cook 2 hours on low heat.  

Serve pork in burritos, salads or tacos.  

Cheesy Southwest Soup

Ingredients 

2 t. minced garlic

1/4 cup onion, minced

1/2 pound boneless, skinless chicken breast (I use 3 cans of canned chicken)

2 T. olive oil

1 T. fajita seasoning

1 (11 ounce) can mexicorn (drained)

1 (15 ounce) can black beans (rinsed and drained)

1 (10 ounce) can diced tomatoes and green chilies

3 cups chicken broth

1 t. cumin

1/2 t chili powder

salt and pepper to taste

8 ounce velveeta cheese (cubed)

Topping

cilantro 

sour cream

avacado

tortilla chips

In a stock pot over medium heat, cook garlic, onion, and chicken breasts in olive oil until browned.  Sprinkle with Fajita seasoning, and stir until combined.  

Add mexicorn, black beans, tomatoes, chicken broth, cumin, chili powder,  and salt and pepper.  Bring to a boil.  Reduce heat and simmer for 10 minutes.  Remove from heat and stir in velveeta cheese until it is completely melted.  Pour into bowls and serve.  Top ciliantro, sour cream and avocado and tortilla strips.

~Perfect Pumpkin Pancakes~

Perfect Pumpkin Pancakes
I love new recipes!!
This time of year anything pumpkin is a winner.
I found this super yummy recipe idea on a
friend of a friends blog and had to try it.

Huge hit, and super yummy!!
The whole house smelt incredible!!

3 T. melted butter
1 cup milk
2 eggs
1/2 cup pumpkin puree
3 T. brown sugar
1 t. ground cinnamon
1/2 t. ground nutmeg
1/4 t. ground ginger
1/4 t. ground cloves
1/4 t. salt
1/2 t. baking soda
1 t. baking powder
1 and 1/4 cups flour
In a medium bowl mix all of the wet ingredients
together and then the spices, followed by the flour.
Cook on a griddle like normal pancakes.
Top with warm syrup, and or whip topping

~Chicken Tacos~

Chicken Tacos
Alright, I have found another great recipe. I found this one
on another blog that I love. {jandaandco.blogspot}
The lady is on the quest to drop a few pounds and is helping
her blogging friends with great ideas and recipes. I have
recently lost 15 pounds,
so this low calorie meal sounded perfect
to help keep the weight off!!!
These are only 300 calories for 2!!!!
The best part about these are the
whole family LOVES them!!!
Chicken Tacos
spray butter
white corn tortillas {must be corn}
fat free refried beans or black beans
low fat Mozzarella cheese
bag of Tyson Frozen grilled chicken {pre-cooked}
lettuce
tomatoes
fat free sour cream
green salsa from La Victoria {we used our salsa}
Use a skillet or a griddle and place on stove top
at medium heat. Spread a small layer like a table spoon of
either beans on your corn
tortillas. Spray the bottom of them with the
spray butter and place butter
side down on the skillet.
Add 1 T. of cheese to each tortilla
In the meantime warm the chicken in the microwave.
Once it is warm add it to the tortilla. Let it cook
until it starts to get crispy on the bottom.
Remove from the skillet and place on a plate.
Add your lettuce, chopped tomato, sour
cream and salsa.
So Yummy!!
