Shredded Chicken

Ingredients:

3-4 chicken breast

1 large jar of favorite salsa

1/4 cup brown sugar

Instructions:

Mix together and place in a crock pot 3-4 hours on high or 6-8 hours on low.

Cafe Rio Sweet Pork

 3 lbs pork shoulder/butt

16 oz coca-cola soda (not diet), divided

1/4 cup water

1 t garlic salt

1/8 t salt

1/4 pepper

1 (4oz) can diced green chilies

1 (10 oz) can red enchilada sauce

3/4 cup packed brown sugar

Spray inside of a large crock pot with cooking spray.  Place pork roast inside.  Pour 8 ounce of coke (use a measure cup) and water around pork. (It doesn't need to cover roast) Sprinkle evenly with garlic salt, salt and pepper.  Cover with lid and cook on high heat for 6 hours or on low hear 8-9 hours.  

Remove pork from crock pot and transfer to cutting board.  Discard liquid from crock pot.  Shred pork with two forks, and remove any fat.

In a blender or food processor, blender the remaining 8 ounces of coke, diced green chilies, enchilada sauce and brown sugar.  Blend until smooth.

Place shredded pork back in crock pot.  Pour enchiladas sauce mixture over the shredded pork.  Cover crock pot with lid and cook 2 hours on low heat. 

Serve pork in burritos, salads and tacos.

Chili Lime Chicken Tostadas

 Ingredients

1 can diced green chilies

4 cloves of minced garlic

1 1/2 T chili powder

3 T lime juice

1 diced medium onion

2 lbs boneless chicken breasts

1 can fat free refried beans, warmed

10 tostada shells

Instructions

Desired toppings such as, shredded lettuce, shredded cheese, salsa, light sour cream, sliced olives, and guacamole

Add chicken and onion to slower cooker that is at east 3 1/2 quarts

In a bowl combine green chilies, garlic, chili powder, and lime juice.  Pour over chicken.

Cover and cook on low for 5-6 hours

Remove chicken from slow cooker and shred.  Mix in 1/2 of juice remining in slow cooker to the shredded chicken. 

Spread warmed refried beans on tostada shells.

Top with hot chicken mixture and any other desired toppings.

Slow Beef and Broccoli

Ingredients

  • 2/3 c. packed brown sugar 
  • 2T. minced garlic
  • 1/2 t. chilli flakes
  • 2 c. beef broth
  • 1 c. soy sauce
  • 1/3 c. cornstarch

Mix the above together


  • 2lbs beef chuck roast thin strips

Cook on high for 3-4 hours, cook uncovered last 30 minutes with broccoli

~Crockpot Italian Chicken

 
 
Crock pot Italian Chicken
 
 
4 Chicken breast
1 packet Zesty Italian dressing seasoning
1 8 oz cream cheese {softened}
2 cans of cream of chicken soup
 
Cook on low for 4 hours.  If sauce is too thick, add a little milk.  Serve over pasta.

~Cherry Delight Crock-Pot style~

1 can {21 ounce} cherry pie filling
1 package {18 1/4 ounces} yellow cake mix
1/2 c. {1stick} butter, melted
1/3c. walnuts {optional}
whipped topping or vanilla ice cream {optional}

Place pie filling in Crock-pot slow cooker.  Mix together cake mix and butter in medium bowl.  Spread evenly over cherry filling.  Sprinkle walnuts on top.  Cover; cook on LOW 3-4 hours or HIGH 1 1/2 to 2 hours. Spoon into serving dishes, and serve warm with whipped topping or ice cream, if desired.


This is wonderful!!!  It is very sweet and so rich! A little bit goes a long way!

Southwest Chicken Nachos

Southwest Chicken Nachos
~Ingredients~
1 small back frozen corn
1 can black beans-drained
1 {16 oz} jar medium salsa {I used half medium and half hot}
2 large frozen, boneless chicken breast
shredded cheese
avocados
sour cream
chopped cilantro
tortilla chips

~Direction~
Pour bag of frozen corn in bottom of crock pot. Place frozen chicken breast on top of corn and cover with rinsed and drained black beans and your salsa. Cook on high for 1 hour, and then on low for 4 hours. {It took mine 2 hours on high to be able to shred} Shred chicken with forks. {After we shredded the chicken we let it cook anther hour to soak in the flavors} Serve with tortilla chips and add toppings to individual servings. The salty crunchy chips make this so good!!
